Collard Greens

It's New Years Day and we have just had the most wonderful, absolutely traditional meal. Ham, black eyed peas, collard greens and biscuits. Do you know how to cook collards? My mom slices them real thin and then cooks them along with diced country ham, diced onion and some garlic in a quart of chicken stock. After about an hour, add 1 t. crushed red pepper, 2 T. brown sugar and 2 T. vinegar and then cook until they are done. We added a teaspoon of chili garlic hot sauce too. Yum. You never had collards so good.

Do you think there is any truth to the old wive's tale that whatever you did on New Year's Day, you will do for the rest of the year. I hope so. I played with my toys and took a long nap.
